{"id":78,"date":"2009-05-12T09:06:32","date_gmt":"2009-05-12T13:06:32","guid":{"rendered":"https:\/\/chefjudigallagher.com\/scrumptious\/?p=78"},"modified":"2011-03-26T19:18:08","modified_gmt":"2011-03-26T23:18:08","slug":"chef-judis-recipe-for-may","status":"publish","type":"post","link":"https:\/\/chefjudigallagher.com\/scrumptious\/chef-judis-recipe-for-may\/","title":{"rendered":"Chef Judi&#8217;s Recipe for May"},"content":{"rendered":"<p>Grilled Jumbo Prawns with cucumber mint salad and yogurt dressing<\/p>\n<p>1 yellow bell pepper<br \/>\n1 red bell pepper<br \/>\n\u00bd red onion sliced very thin<br \/>\n1 large English cucumber, skin on<br \/>\n4 large fresh tomatoes, diced<br \/>\n1 yellow tomato diced<br \/>\n1 bunch scallions, chopped<br \/>\n2 Tablespoons minced flat leaf parsley<br \/>\n2 Tablespoons fresh cilantro, minced plus 1 teaspoon<br \/>\n3 cloves garlic smashed<br \/>\n6 Tablespoons extra virgin olive oil<br \/>\nJuice of 2 lemons<br \/>\nKosher salt<br \/>\nFresh ground white pepper<\/p>\n<p>8 jumbo shrimp, cleaned and deveined, tail on<br \/>\nOlive oil<br \/>\n3 Tablespoons plain Greek yogurt<br \/>\n1 teaspoon fresh lime juice or lemon juice<br \/>\nSalt and pepper as needed<!--more--><\/p>\n<p>Heat grill to medium high. Brush shrimp with olive oil<br \/>\nGrill shrimp on double skewer to prevent curling. About 2-3 minutes per side until pink.<br \/>\nThinly slice bell peppers, removing core and seeds. Chop cucumber. Add tomatoes and cucumbers to thinly sliced peppers. Gently toss in scallions and fresh herbs.<\/p>\n<p>In a separate bowl, mix the garlic with the lemon juice until well blended. Season with salt and pepper to taste.<br \/>\nPour the dressing over the salad and toss lightly.<br \/>\nPlace a serving in the center of the plate. Lay grilled shrimp on top<\/p>\n<p>Mix the yogurt and lemon juice with one teaspoon cilantro.
