Less technical than earlier books- this has a beautiful selection of recipes and culinary definitions.<br \/>\n<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">Cream of Tomato Soup with Rice and Basil <\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">2 Tablespoons olive oil<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">11\/2 cups onions, chopped<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">1-quart vegetable broth<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">1 Tablespoon fresh garlic, minced<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">\u00bc cup fresh basil, chopped<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">1 pinch crushed red pepper<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">28 ounce can high quality plum tomatoes<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">1-cup heavy cream<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">2- cups cooked rice<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">1 Tablespoon basil, chiffonade (roll basil and slice into thin strips)<!--more--><br \/>\n<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">Heat Olive oil in large soup pot. Add onions and garlic and sweat but do not brown until translucent- about 5 minutes. Add broth and tomatoes, reserving about \u00bd cup\u00a0 juice from tomatoes. Simmer until all vegetables are tender, about 20-25 minutes.<br \/>\n<\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">Puree the soup with a handheld blender, or in batches in a food processor. <\/span><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: x-small; font-family: Verdana;\"><span style=\"font-size: 10pt; font-family: Verdana;\">Return the pureed soup to a low simmer. In a small pan, gently simmer the heavy cream before adding to the soup, then use the reserved tomato juice to adjust the final consistency.
